McGill has some dorms...I think it's called The Royal Victoria College? Someone else might be able to give you specifics. Maybe google McGill and dorms?

I know there are some extended-residency hotels in Montreal - they've got little kitchenettes and whatnot. There's one on St. Laurent just south of Sherbrooke, is there not? I know you said no hotels but the extended-residency places are really more like temporary apartments, so it might be worth looking into. Or googling :)

They have rooms with private bathrooms at LAMIMO. I think they even have a hotel-residence. Don't know if that'd interest you...
