I haven't gone to either of those places for the sole purpose of star gazing, but I have gone camping/skiing at both locales. Tremblant would probably be better for what you want to do, albeit it is much further. If you are thinking of spending the night, I would go for Tremblant, if not, then go to St-Sauveur.
Small addendum: I once called a campsite in the evening to ask if it was okay if I came late and they said “Sure! No problem!” and they even left out a chord of wood with my name on it. So my best advice would be to call and explain what you want to do.
