So against what might be my better judgment, I'm teaching the weeklong class for 12-16 year olds in "getting published" again this year. I have doubled or possibly tripled the amount of activities I have planned and I think it will go a lot better than last year. I think these are important points. Maybe have them do drafts of the pitch letters and submissions, and then look them over together and/or have you look them over, and correct these details. That way you could incorporate this into writing the letters.

Previous commentor sounded like s/he had the best, most simple idea. Write cover letters or ptich letters, go over them in pairs or groups, note what was left out. Have a checklist made up of what is essential. Vote for the best letter.
You could make it fun by telling them to pitch something funny--a first-hand decrption of Mars, recipes made from worms.
