I seem to have lost my mom's lemon icebox pie recipe. Most of the ones I can find on-line involve baking, and hers did not (I'm also confused -- should it be "hers" or "her's" here ( Read more... )

Lemon Ice Box Pie, from the Ladies Home Journal, June, 1950

1 small can evaporated milk
2 eggs
1/3 cup lemon juice
1T grated lemon peel
½ cup sugar
Spiced Crumbs (recipe below)

1. Pour milk into ice cube tray, chill until crystals start to form
2. Separate eggs, mix yolks with sugar, lemon juice and grated peel.
3. Beat egg whites stiff, then lightly mix in yolk mixture
4. Turn chilled milk into a bowl, beat stiff and carefully fold into egg mixture
5. Pour into ice cube tray lined with spiced crumbs
6. Swirl top, decorate with lemon peel twists and freeze

Spiced Crumbs
Mix ¾ cup crisp toast crumbs, ½ cup brown sugar, ½ tsp nutmeg, ¼ tsp allspice, 1 tsp cinnamon; ¼ tsp cloves, ¼ tsp ginger, 3T melted butter.

Someone found an old icecube tray and said it was roughly 5x11 so 55 square inch planform. That's *pretty* close to the area of an 8x8 plan. I'm not sure what the area of a loaf pan is, but that might work. Getting the first slice out of a loaf pan is likely to be ugly, though.

Mangled pieces seem to taste the same as the perfect one:) I might have to give that one a try!
