Spanish Pork

This is another tasty recipe using pork tenderloins.

1-1 1/2 lb (450-700g) pork fillet, sliced
2 level tbsps seasoned flour
2 medium onions, sliced
2 oz (1/4 cup) oil
2 green peppers (capsicums), deseeded and sliced
1/4 lb (125g) mushrooms, sliced
14 oz (400g) can of tomatoes
Salt and pepper

It is. I forgot to add that we usually have it with scalloped potatoes, but you could have a side salad, if you prefer.

We used to use whole, but these day use the diced ones. And we usually have scalloped potatoes with it. If you give it a try, I hope you enjoy it. In the Seventies it used to be my go-to, fail-safe dinner party dish, so you can see how long we’ve been eating it!
