This is my first public livejournal post in two years. It is also the day my boyfriend and I opened a bank account together, worked on my house together, and toasted the beginning of our new life together with a bottle of wine we had been saving for a year. The reason I've repeated your title, beyond how much it delights me, is that I'm going to save this recipe in my files.

Also, have you invested in a kevlar glove? They make mandolines so much more approachable.

I hope the recipe works out for you - it was fun to make, though a bit time-consuming.

And yes, a cut-resistant glove is on my list of things to buy. The mandolin came with this pusher attachment, but I did not find it very practical for small objects like shallots.

*agrees* Those pusher widgets are worse than useless.
