Made Champagne Risotto for dinner. Mmmmm, now that's what I call comfort food!

Only one problem. Recipe only used one cup of champagne, now what to do with the rest of the bottle?

Seriously. Champagne is about the only alcoholic beverage I actually like. Bubbly whee!

Just opening the bottle was excitement enough for me THE CORK FLEW ALL THE WAY ACROSS THE ROOM not sure I could handle actually drinking it!

Well. I'm sipping on one glass right now, it's delightful.

Is that a Nigella special? I haven't made it yet, but I want to! I made her lemon risotto and it was boss.

Drink the rest! Or make mimosas. Or add Chambord!

I got the idea from you mentioning it recently! Sounded so yummy and I've had this bottle for a while. But I just googled it and combined a few recipes. Super yummy, you should try it soon!

So I made champagne truffles, but that recipe only used 3 tablespoons, so fat lot of good that did. We managed to drink the rest, just tipsy enough to know I probably shouldn't allow myself to be on the internet unsupervised. :P
