For that, I'd buy some candied orange peel and slice it to the required size. Sainsbury sell a rather decent box of mixed peel - orange, lemon and citron. It's in large pieces - almost as if the fruits were skinned to just above the pith. I've been using in it pagan buns.
Chilli chocolate also goes very well in chilli con carne!

I've never done it but it sounds like it ought to work - basically you make it in large pieces, so unlike marmalade or jam where the object is to suspend the fruit in a sugary syrup, you're trying to get the syrup into the fruit.

If you don't want to use ready canded peel then make sure you only use peel from unwaxed oranges because the waxes used to make citrus friut look shiny and last longer aren't meant to be eaten.
