My great aunt used to make a recipe she got from my great grandmother from Sicily.  It was raw mackeral "cooked" ala ceviche, in vinegar and mint.  My great aunt absolutely refused to share any recipes with my mother, so we don't have it.  It's one of mom's favorite dishes for Christmas Eve and I'd like to make it for her this year, but I can't ( Read more... )

Ah, that's about the best I can find. Though the cooking is probably a modern adaptation to changing food safety fears, and could be done away with for a much longer soak in the vinegar.

Most of the recipes I've found use citrus juice instead of vinegar for the acid... perhaps a simple substitution?
