Today's achievements:

- Made muffins
- One more load of washing up from party
- Had lunch with colleague and her 9 week old baby.
- Washed hair (Those of you without children, stop laughing. Once the robin arrives, I suspect this will count as a major victory.)

If you do #1 you'll end up cooking the eggs! My method is posted here: http://myhousesmellslikevanilla.blogspot.com/2010/01/my-house-smells-like-muffins.html but I might update it to say

"I chop the butter into smallish chunks and melt for 30 seconds in the microwave on high, then swirl around, then another 30 seconds and leave it to sit and cool. If there are bits not melted, I might leave it for a while (as I sift flour etc) and then zap it for 30 more seconds. It's REALLY important to melt it then cool it before adding cold ingredients (milk) or cookable ones (eggs)!".

How long to go now?

That was what I thought, and why I added the milk before the eggs. But I'm wondering whether allowing the butter to cool a bit more than beating in the egg would form an emulsion to which I could then add the milk without the butter precipitating out. On the other hand, since muffins don't rely on a perfectly even texture, I'm not sure how much it matters!

And I'm due in early March, so should have at least another couple of weeks clear before the robin arrives. How about you?
