Today's achievements:

- Made muffins
- One more load of washing up from party
- Had lunch with colleague and her 9 week old baby.
- Washed hair (Those of you without children, stop laughing. Once the robin arrives, I suspect this will count as a major victory.)


Muffin recipe, included because unlike my default method of "cream butter and sugar, etc...", this recipe does not require any mixing implements other than a spoon and a fork so there's no mucking about with (or washing up!) beaters.

Berry muffins
200g SR flour
140g mixed blueberries and raspberries (because I had 2/3 punnet of each already in the fridge, and just threw it all in. The resulting muffins had plenty of fruit, so it would be fine to use 1 x 125g punnet)
60g butter
2/3 cup sugar
200mL milk
1 lightly beaten egg

Preheat oven to 200 degrees. Line 10 cups of a 12cup muffin pan with paper cases. Sift flour into large bowl, tip berries on top. Melt butter in medium bowl in microwave, stir in sugar, milk, and egg. Pour wet ingredients into dry ones, mix until just combined.  Spoon into muffin cases and bake in oven until risen and golden and top feels springy (~18minutes).

Notes for next time:
1. I mixed the wet ingredients in the order given, but the temperature drop when the milk went in caused lumps of butter to form - possibly adding the egg before the milk might have been a better idea.

However, I haven't yet done anything from my February list. Oops. And it's now outside business hours and too hot to sort out cupboards or do filing: washing clothes for the hospital bag it is.
