I made these for the party on Sunday.
Chocolate cupcakes
125g butter
110g caster sugar
3 eggs
80g dark couverture chocolate
100g SR flour
25g cocoa
Chocolate ganache
100mL cream
180g chocolate
Heat oven to 180 degrees. Line 9 cups of a 12 cup muffin pan with paper cases. Cream butter and sugar until light and fluffy, beat in eggs one at a time, stabilising with a spoonful of flour. Melt chocolate in microwave and stir into mixture. Sift in flour and cocoa and mix until smooth. Spoon into cases (don't overfill) and cook for 20 minutes. Allow to cool. While cakes are cooling, chop remaining chocolate finely, then bring cream to boiling point in microwave. Add chopped chocolate and stir until smooth. Put ganache in fridge to cool (about an hour). Ice cupcakes with ganache when both have cooled sufficiently.
These turned out really well: dense and moist. I tried to vary the recipe using orange juice instead of chocolate, but that wasn't so successful - the cakes came out a bit tough. I'm not really surprised, since chocolate and orange juice have completely different fat/sugar/water ratios.
