Anzac biscuits

This  afternoon I have been making Anzac biscuits. I actually had to look up recipes, bad Australian that I am. Of course, there are a thousand ond one variations, but the basics appear to be flour, oats, brown sugar, and butter. I too consider golden syrup to be mandatory, but I did see some recipes that replaced it with honey.

Well that's all right then: I'm glad you clarified.

And yes, lots of recipes use plain flour and bicarb, but I didn't have any plain flour in the house so used self-raising instead. I was a bit worried the biscuits would get a bit over-puffed as a result, but clearly that quantity of oats is enough to hold anything down.

My recipe is easy to remember because it's 1 cup of everything (except golden syrup) -- flour, oats, coconut and sugar, then the same butter and golden syrup as yours but no water (I don't think! been ages since I made them). I think yours would probably give a better result though, I like my Anzacs more oaty (and usually end up just adjusting the amounts accordingly, in fact). And yes, chewy is far preferable to crunchy! If the oven temperature is right then 'golden around edges' should do it...
