Glad the pies worked out for the most part. You could get an oven thermometer for a relatively low price and use it to calibrate things so that you know what to set it for if you really want it to be 350 (or whatever temp you are aiming for).

I have an internal oven thermometer that I've been using, but that only works for setting the initial temp and determining the final temp. I have a meat thermometer that has a cord into the oven, but I don't think it works for oven temp.

The one with the cord should work in the oven too. Try it and see!

Get a pizza stone. It is easy enough to take with you when you move, and will have the same effect as the terracotta pot base. Ideally you should preheat the over for about 20-30 minutes before you want to use it for this to really help.

And pizzas are just another variation of pie! :)
