Maybe next time 1 small can of paste with no water. I want a thick sauce.

Well, I added water partly to get more paste from the can and partly 'cause the instructions said "1 can paste, 4 cups water".

The bitterness almost certainly came from either the large amount of tomato paste, or the garlic. Adding a little sugar might help.

It wasn't a garlic taste. I'm thinking it must have been the paste, though it didn't taste like that before I added the bay leaves. Perhaps the paste hadn't spread enough at that point.

It's a hard flavor to describe, but even as someone who loves bay, I'm pretty sure that's what it was.

I vote that it was the bay leaves. They can be very strong. Even so I would have to agree with those above about decreasing the amount of tomato paste (I usually use half a small can with a large can tomato sauce, a large can diced tomatoes and no water for a thick sauce) and leaving out the water.

p.s. There was no meat in this sauce???? lol My roommate and I laugh at the fact that all my meals MUST contain meat. :)

My roommate has decided to go vegetarian and has given me all the meat she had in the freezer. I'm a happy, happy gal. :D
