This weekend has been beautiful. I just love a long weekend right when the weather has been getting especially warm and the days long.

I was so pleased to get a visit today from my friends Sandhya (pickamuffin here on LJ) and Alex. They live a couple hours away so we only see them every few months or so.

I made this one up today for my friend Alex. I plan to try it again in two weeks. It was actually very good with the extra nuts: they softened and became candy with the sugar and butter, and had a great texture for ice cream stir-in. Kevin got me an awesome ice cream maker as a Yule gift, and I have been keeping it busy. These were the first several batches I made. Unless otherwise noted, I used a base recipe of two cups whipping cream, one cup whole milk, 3/4 cup sugar (more to taste), and two eggs. It takes about an hour for the ice cream maker to make nice, hard ice cream. I ( Read more... )
