Kale gratin sounds great. Also, brining gets my endorsement, the only problem I had was finding enough room in the fridge - not so much of a problem, as I used my Dad's, which only contains a moderate amount of cookies, candy, some soda, and for some reason a container of mercury he found in a yard sale. o_O

A well sealed container, I've been hoping. Good idea to dismantle the bird first!

My former father-in-law had some container of mercury rattling around his house, too. I think it's some sort of attraction to danger, born of reading comic books featuring mad scientists at a formative age, that makes some people want to keep hazmat around.
