I think this post is MADE for Emily's Children's Quesadillas for saucydiva.

Most of my versions of cooking involve using grubhub or making a crapload of pb&js, both of which I'm an expert at.

OH MY GOD THIS POST WAS PRACTICALLY MADE FOR ME.

Here are some favorites:

Maple-Chili Glazed Pork Medallions

1 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon ground chipotle pepper (or just black pepper. No one knows wtf chipotle pepper is)
1 pound pork tenderloin, trimmed and cut crosswise into 1-inch-thick medallions
2 teaspoons canola oil
1/4 cup apple cider
1 tablespoon maple syrup
1 teaspoon cider vinegar

Mix chili powder, salt and ground chipotle in a small bowl. Sprinkle over both sides of pork.
Heat oil in a large skillet over medium-high heat. Add the pork and cook until golden, 1 to 2 minutes per side. Add cider, syrup and vinegar to the pan. Bring to a boil, scraping up any browned bits. Reduce the heat to medium and cook, turning the pork occasionally to coat, until the sauce is reduced to a thick glaze, 1 to 3 minutes. Serve the pork drizzled with the glaze.

NOTE: I always make double the spice mixture for extra flavor, and I double the maple syrup. (It's what Leslie Knope would do)

Oooh, excellent. I like Montreal Steak on chicken (better than their chicken mix, for some reason?). that's my lazy dinner: just slap some of that stuff on chicken breasts and bake. Maybe add a baked potato. Leftovers can be sliced and eaten cold on a salad. It's perfect.

Beef Stroganoff

1 onion, sliced
3 tablespoons butter
2 lbs round steak, cut into ¼ inch strips
1½ cups dry red wine
1 teaspoon salt
⅛ teaspoon pepper
¼ teaspoon garlic powder
1 tablespoon worcestershire sauce
1½ teaspoons instant beef bouillon
¼ lb fresh mushrooms, cleaned and sliced
⅓ cup flour
1½ cups sour cream
Egg noodles for serving

Trim all fat and bone from meat. Slice in ¼ inch wide strips 2-3 inches long. In a large skillet, melt butter and brown meat. Drain juice from skillet, put meat in slow cooker. Add all ingredients but mushrooms, sour cream, and flour. Cover and cook 5-7 hours on low. Then combine flour and sour cream and stir into meat mixture. Finally, add mushrooms and cook for one additional hour. Serve over hot egg noodles.

That California Casserole (Mexican lasagna) sounds like it's just beef enchiladas made in the form of a casserole but with egg and some homemade sauce.

If you can find it, try using El Pato Enchilada sauce (red can) instead of making that sauce. Trust me, I'm Mexican.

Oh, I've got one! I forgot.

"Traditional Amber Dinner"

1. Buy a wheel of brie at the grocery store across from where you work.
2. Buy bagel chips
3. go home.
4. Turn on Netflix and begin to watch hours of your favorite television programs
5. Eat the entire wheel of brie by placing it on bagel chips
6. You're still hungry, so make a pb&j as instructed here.
7. go to bed.

I fully support this recipe. My version of it involves me buying hummus and pita chips, which I also recommend.

This is also a traditional beanyb dinner, except I have given up the facade of the chips and will regularly just eat the brie solo.

I'm classy and health conscious like that.
