The last time I was at a hotel with the only breakfast option as Starbucks [1] I got some great mileage out of their oatmeal. It's not horrifically expensive either.

[1] Because who's going to go to the hotel restaurant for the non-price-included breakfast before 8:30, I'm there for a wedding, I ask you.
Slightly different situation here. Being a work trip, the corresponding consequence that my chunk of expenditures are to be expensed, which makes me a bit less motivated to get mileage out of oatmeal.
On the other hand, the ludicrously expensive buffet breakfast at Mandalay Bay turned out, for only a little more than the overpriced omelets, to be so good that I'd consider it even if I were paying for it myself.
