sweet potato & apple soup

1 bunch scallions, chopped (green parts only) [or one onion, chopped]
2 lbs sweet potatoes, peeled and cubed
½ lb carrots, peeled and chopped
2 apples, peeled, cored, and chopped
3 cups chicken broth
1 cup water
Fresh thyme for garnish
1 apple, cored and chopped, for garnish
[If using butter & onion (as opposed to the margarine & scallions), heat the butter in a skillet over medium and sauté the onion until softened; add with the rest of the ingredients in the next step.]
Put all ingredients in rhe slow cooker, stir, cover, and cook on Low for 4 to 5 hours or High for 2 to 2½ hours, until veggies are soft and cooked through.
Puree with an immersion blender. Serve hot and garnish with thyme and chopped apple.
Side note: I found that putting a thyme sprig on top with the rest of the ingredients added a nice note to the soup, and upped the flavor profile (I discarded it before blending). Chopped apple on top helps bring out the apple notes nicely. I always use granny smith when I make this.
