my mother gave me some apples

i was thinking i would just take them for lunch but now it occurs to me that i have store-bought pie crust sitting in the fridge. so i am thinking i might make an apple pie. i have never made an apple pie, but there's no time like the present, right?

sure! the filling is actually pretty easy to make, it's just time-consuming (slicing all those apples... though i expect you are only one pie, so it won't be the crazy amount of apples my sister slices for thanksgiving).

You can mess with the spices, but don't cut the sugar by more than half, don't omit the dotting with butter or margarine. And yes, you need that flour mixed in with the apples if you want a nice binding syrup. That's also why you can only mess with the sugar so far. If the apples are not juicy, don't mess with the sugar, period.

that looks really good but would require a trip to the store, whereas i think i can make something with no trip to the store. and since i bought out the entire stock of penzey's over the weekend, i am feeling like i should try to stay out of stores ;-) . but i registered and printed it for another day.

Yeah. I hear you on "not going to go to buy one thing!". I've a number of lumps of frozen apple cider in the freezer just for this recipe.

why spend loads of time peeling and slicing apples (which you could take with you for lunch) when you could make mock apple pie with RitzTM crackers?
