Suggestions?

My father dearly loves deviled eggs, but given his health issues, really should not have them. Faeryn is searching for a tasty yolk-free recipe that she can make for him. I think other fillings for the cooked egg-whites would work as well, but of course everything I think of, like chicken/tuna/crab salad would take real mayo to taste good (at ( Read more... )

Maybe substitute Egg Beaters for the yolks? I'm not fond of them in general, but it's possible that all the other flavor in deviled eggs would minimize the not-quite-egg flavor.

Seasonings may do the trick to make substitutes taste better, as redaxe wrote. Maybe even good enough that low fat mayo can be used. Paprika? When I eat deviled eggs, which is rarely, I usually spoon out and throw away half the yolk, so I still get some of the *deviled* taste.

BTW, going through a ConCertino '95 taping by Lois the other day, I heard what had to be Greg's laugh at one point. He had such a full-voiced, happy laugh. Sigh. Hang in there, and keep trying to remember the good times. They *are* there in your memory.

If he likes Hellman's mayo, there's not actually must taste difference between regular and light. Even Hoppie will eat the light without whining like a sissy girl. (He can't actually tell the difference, although he claims he can.)
