Recipe: Apple Cheddarwurst Noodles

I'm pretty sure I haven't posted this recipe before, since I've only made it once in the last couple of years, but it's an old favorite of mine that my mom put me onto nearly two decades ago. I reconstructed it from memory this evening, and I think I got it juuuuuust about right.

Sadly, I don't see any way to tweak this recipe to where both Russ & I would eat it. Russ wouldn't want the cheddarwurst, but I'm sure we could find some other sausage-like substance that would work; unfortunately, my issue is the sauerkraut, and I can't think of any reasonable substitute for that. *sigh* It sounds interesting, though.

xphoenixrising has a point -- you could easily sub something in for the sauerkraut. Honestly, it's not there for the taste; more for the texture and filling out the sauce to give it a little more body.
