Recipe: Apple Cheddarwurst Noodles

I'm pretty sure I haven't posted this recipe before, since I've only made it once in the last couple of years, but it's an old favorite of mine that my mom put me onto nearly two decades ago. I reconstructed it from memory this evening, and I think I got it juuuuuust about right.

Apple Cheddarwurst Noodles

Ingredients:

* 8 oz. egg noodles
* 1/2 cup butter (1 stick)
* 2 tablespoons poppy seeds
* 2 apples, peeled, cored, and diced
* 1 cup sauerkraut
* 6 links cheddarwurst, sliced
* 2 cups apple juice
* 1/2 cup brown sugar
* 2 tablespoons vegetable oil

Method:

1. Heat vegetable oil in a medium-sized skillet over medium heat. Saute diced apples, cheddarwurst, and sauerkraut until fragrant. Add apple juice and brown sugar to mix, and simmer until apples lose their crispness (I recommend around 8 - 10 minutes).

2. While apple-cheddarwurst mix is cooking, boil 2 quarts of lightly salted water. Add egg noodles and cook for 8 - 9 minutes. Drain, melt butter in noodles, and stir in poppy seeds.

Makes 4 - 5 servings. Tastes great both hot and reheated.
