My absolute favorite Pratchett has always been Small Gods, but it's a bit heavy for a first-timer. I would actually suggest one of the ostensibly YA novels -- I recently suggested The Amazing Maurice and His Educatd Rodents to someone, and that went over very well, but I think I'd most recommend The Wee Free Men. It has a touching story, good characters, and maintains a Pratchetty worldview without some of the a-bit-much humor that appears in some of the earlier novels.
