Now I'm craving pie again

I made a coconut cream pie this weekend (well, 2 of them) for a friend's birthday. It turned out well, in spite of some snafus while making the crust (it was so gosh darn STICKY!). Plus, cutting in the butter by hand takes a bit of elbow grease, since I don't have a food processor and am trying to avoid having too many kitchen gadgets. (A daily ( Read more... )

I think I've seen foil mini pie tins (though they're probably called tartlet tins or something lke that) at Kroger, in the same section where you get disposable roasting pans, etc. They can be used more than once if you're careful (I've got some mini-loaf pans that I've managed to make last a few sessions), if you're concerned about that, though being made of aluminum they're recyclable too.

I've used muffin pans, or jumbo muffin pans. You have to change the temp of the oven, though, so that they cook right unless you have a recipe specifically for mini things.

I just thought about making mini quiches today, actually!
