Fried yucca sounds promising. I think I may have had some down in Mexico once, but I can't remember. I know I have had cactus of some form before and it was "okay" to my younger, veggie-hating tastebuds.
They have cactus at the grocery store..."tuna"...I'm not sure what to do with it (how to prepare it), but I've been eyeballing it. Maybe eventually I'll give it a go. :-)
