I've finally finished training, and am now officially a full-fledged waitress at Saltgrass in Meyerland (for those of you who are Houstonians). I just left an interview at a Saltgrass Steakhouse in CO....it went really well, I am nervous about the testing and then serving a manager though...what is the testing like, and how bad is it to go through? The manager there made it seem like I was applying for NASA...I mean I know they are serious about their quality of service, which I think is great, but what am I in for?

The tests are pretty straight-forward. They're detailed, but the questions won't be too hard as long as you study, and you go through the training shift that corresponds with the test before you take it, so you'll learn the stuff hands-on. The training book covers everything that you need to know. Definitely know the Core Values...they're big on that. The manager test made me nervous too, but you should be fine, and you'll get some practice with serving in your follows before having to serve the manager.
As for what your in for, it's an ok job. You're going to have good nights and bad nights. The worst part is that some people are bad tippers. And if the restaurant is busy it can be pretty hectic running around serving people, but your co-workers should be willing to help you out if you need something. Everyone sort of works together.
You'll be fine. It really just takes practice and getting used to. Let me know if you have any questions or need help!

I really appreciate your response as well as your offer for more help if needed. I have orientation coming up on Thursday. It just seems like a lot to go through for a waitress job...I have the experience, I've been waitressing for years now...but it was never at a corporate restaurant, so this is a little new to me. I have handled large volumes of people, I've even worked groups of 100+...and yet this job makes me very nervous. Another question, how is it carrying those giant serving trays? I am so afraid that I am going to balance things on it improperly and drop it...I've never used one. I became pretty good at balancing several plates in my hands and on my forearms, and we always had bus boys or someone to follow with what we couldn't carry. I can't believe I'm going through all this inner torture for a job...silly. Again, thanks so much for your insight.

Learning to balance the trays is a little tricky at first, but you'll figure out how to arrange things so that it's easier to carry. With drinks it's easiest to put them kind of in the middle. They are pretty heavy, and I'm kind of small, so I have a hard time. But if you need help someone will probably be willing to carry it for you. I get guys to carry my trays all the time :) On your follows they will let you practice carrying trays. You might have a food running shift too for more practice.
If you've handled a lot of people before you'll definitely be good at managing all your tables.
Don't worry too much, I was really nervous about working there, but it gets easier with every shift. :)
