Potato water for gravy, huh? I can see where that'd work. I had never thought of it because I don't think we've ever added water to gravy, before...just the straight pan juices from whatever meat we've cooked, along with the onion (and often carrot) cooking juices that were in the pot with the chicken (or beef roast). Of course, usually we cook large pieces of meat in a bit of water to begin, enough so that it doesn't dry out by the end of the cooking time, so it's probably there from the start :)
If it's beef gravy, we all love it with some red wine added, too.
