Recipes please!

People, I need your help! For health/weight loss reason I've decided to eat two vegetarian meals a day. I've realize that I eat too much meat and too much of the wrong kind. I plan my meals by picking a meat and then (maybe) picking a vegetable to go with it. I need to teach myself that meat doesn't make the meal and up my intake of vegetables and ( Read more... )

Curry tofu! It takes a bit of prep time, but it'll last you for days. Basically, you want to track down a can of coconut milk and yellow curry paste. I was recently gifted with "Lobo" brand and it was amazingly good. You also want whatever frozen vegetables you like, and your standard pound of extra firm tofu.

You want to press the water out of the tofu--I use a cutting board on the bottom and a plate on the top--and put something heavy on it for like 15-30 minutes. Then you cut the tofu into small flat chunks kind of like this but no longer than an inch, and you want to fry it. You can do this either by just throwing them into a hot oiled pan and flipping until their outsides are lightly brown and crispy, or you can actually make a crust for them by dipping them in beaten eggs and then bread crumbs. The goal is to give it a bit more of a texture than your standard tofu. ANYWAY, after you've finished that, you basically slap everything together in a pot and heat it up until the vegetables are hot ( ... )

I've never had curry or cooked with tofu. o.o But I'm willing to try! I live within walking distance of two Whole Foods (Yay Northshore!;) so I'm sure I can find the ingredients easily.

Hm, I'm edgy around fish because I find the texture to be a huge turn off. But I like sushi and canned tuna.

I think I'm going to buy up a bunch of tofu and experiment mad scientist style!

It's...flaky. And I hate when they serve fish with the head on or with all those tiny bones.

Red beans and rice! With the right spices, it's so marvelous tasting.

Also, you might look into TVP as a meat replacement. I had some really awesome ground beef-style TVP this past weekend instead of actual beef and it was quite good.

I love red beans and rice! But it's starting to get a little hot for that.;;

Does it have its own taste or does it have to be seasoned like tofu?

The kind I used was pre-seasoned, from Morning Star Farms. (The one I used was http://www.morningstarfarms.com/product_detail.aspx?family=366&id=324.) It's not heavily seasoned though, so basically you'd want to treat it like ground beef. (Like put taco seasoning on it if you're using it for tacos, etc.)

I recently discovered the pure and holy joy what is paneer. It's an easy-to-make cottage cheese. It is fantastic with fresh veggies and a light drizzle of olive oil.

I have recipes. This is an excuse to type some of them up if you'd like. Just one question:
Do you have a rice cooker?

Lasagne, stuffed peppers, curries, pasta / noodles, rice dishes, tofu/mock meats etc.

Hopefully this helped a teensy bit and gave you an idea or two.
