The Garden Overfloweth

I really don't have that big a garden. Four feet by four feet, containing two cucumber vines, four tomatoes, a couple of potatoes, thyme, basil and a collection of marigolds and moss roses. I can weed it in ten minutes, and water it with the hose - no sprinkler needed, it just doesn't take that long ( Read more... )

There is no such thing as an over-abundance of tomatoes and basil in our house. Caprese salad is a staple all summer long. On Friday, I will make a stuffed prosciutto, fresh sage (of which I have an abundance) and onion bread (which we love, but I realize will be of only academic interest to you) and a Caprese salad. (Our Caprese uses chunked tomatoes, buffalo mozzarella, and a chiffonade of lots of basil, dressed in olive oil, fresh lemon juice, salt, and black pepper. Let sit at room temp for at least 1/2 hour to marry flavors. It tastes like...summer.)
