Tigress's Can Jam is back and the challenge this month... is carrots!Carrots are difficult for a few reasons, the most obvious of which is that carrots are a low acid food, which means that they cannot be canned without the addition of some kind of acid. interestingly enough, I use Madison's tap water for pickling, because it's incredibly calcium-laden, and it keeps things a bit crisper. This looks really good.... If I ever decide to grow carrots, I'm totally going to have to use this (I hate cooked carrots).

I never thought to used bottled water - I'm fine with ours, but my mom's water is terrible so this is good to know.

Definitely! I also use bottled water when I make cheese for the same reason.
