Tigress's Can Jam is back and the challenge this month... is carrots!Carrots are difficult for a few reasons, the most obvious of which is that carrots are a low acid food, which means that they cannot be canned without the addition of some kind of acid. I've gone into work one day this week, thanks snowpocalypse! I pickled some beets the other day using Alton Brown's pickle juice recipe and put it in the fridge. Haven't had the chance to try it yet, but it looks tasty. And it was easy.
