Has anyone ever made carrot cake, and if so, can you recommend a recipe?

Here is one that is similar to the one I've made in the past. I'd get you my actual recipe but my recipe box somehow ended up in storage.

Two differences between this recipe and mine:
1. For the batter I drained 1/2 cup of pineapple, quick dried it with a towel, and used in instead of raisins.
2. I didn't use the filling, but it looks like it might be good.

Oh wow, that one sounds amazing! I was going to go through my martha stewart cookbook and see what she has to offer, but i might have to make that instead!

I think the macadamia nuts give it a little something extra. LMK how this one turns out if you decide to make it.

I will definitely let you know. Bill doesn't like nuts except for peanuts but every carrot cake I've ever had had some sort of nuts in them. I might just put fewer in whatever recipe I make.

I love Alton Brown's recipes. I'd give this one a whirl. I haven't tried it yet, but I plan to for a party we're having this summer. I love carrot cake, Joe doesn't, so I need a crowd to make it ( ... )

Oooh! I love Alton Brown, and because this one doesn't have nuts, I'll bet Bill will like it better.
