My Salsa

So I went to the Columbus Farmer's Market in Columbus, New Jersey, where I spent approximately $20 on produce. Here's what I got:

1/2 peck of tomatoes (7 large, perfectly ripe, locally grown tomatoes)
1/2 peck of green peppers ($2 - I remember this clearly)
1/2 peck of jalapeño peppers
2 pounds of tomatillos
1 large bunch of cilantro
1 good-sized piece of fresh ginger
4 large mangoes
2 long green peppers
1 large butternut squash
1/2 peck of limes
5 heads of garlic

For those of you who never spent much time picking or packing produce (or at farmer's markets), 1/2 peck is equivalent to 4 quarts.

Using all the tomatoes, 8 of the jalapeños, the largest green pepper, some of the garlic and cilantro and some ingredients from home (onions, cumin, white vinegar), I have made a batch of salsa, which is currently processing in the hot water bath to seal the 4 full one-pint jars. The recipe said it made "about 5 pints", but it only came up to 4 pints and "about 1/2 cup", so the remaining half cup is cooling in the spare clean jar. And my house smells fantastic.

Those of you who know me well will be unsurprised to learn that I've been dancing around and singing "My Salsa" a la Eminem from the end of the D-12 video, "My Band":
