For lunch: Acorn squash, baked, then filled with brown sugar, cinnamon, pecans and butter. It was a tasty confection, but to be honest, I couldn't actually taste the squash all that much. I'll be trying a savory recipe with my other acorn squash later this week ( Read more... )

Hmm...I wonder if you just got a lame-o acorn squash. Sometimes they are just kind of flavorless and often also stringy and/or watery. But good ones are oh! so good.

It was neither stringy nor watery, but I mostly tasted the nuts and sugar, and the squash? Not so much.

The pecans, brown sugar, cinnamon and butter make it sound more like a dessert. Yumm. We had mashed carrots and turnips yesterday with butter, salt and pepper.

My mom loves acorn squash...probably like you, she can eat it with only butter and nutmeg.
