This show has really surprised me, so many ways. Took a while for Olivia (Anna) to click with me, always liked Walter and Peter. The story also amazes me, the subtle, the wow, all of it. The fact that the myth-arc episodes are just as good, entertaining as the more stand-alone VOTW speaks to how to good the show is. And irks me that Fringe is considered too genre, too sci-fi or "fringe" to get some of the critical acclaim it deserves

Same happened to me with Anna. I wasn't fond of her in the first season, but I think she improved her acting and made the character less cold, and in season 2 I def started loving Olivia

ITA and think the character improved, less about the dead fiancee/partner and more about everyone else. Which gave Anna more to bring and now w/ the dual roles this year, she's really had a chance to stretch and grow. I'm fine with a 4th or even 5th season, IF they plan an endgame that respects the show. I love it but every other episode still feels a little LOST and a lot feels like X-files 2.0; you can only get away with that for so long.. by doing it better. Like you said, consistency.
IDK.. sort of getting over Supernatural for the same reason; seemed like it was racing for a killer finish in S5 then slammed the brakes, pulled a 180 and has lost part of what I enjoyed the most. LOST meandered, got good again for a little while, and then big sputter to the end.. and TPTB bloody KNEW it was coming. JMO.
And I second your squee.. Pacey.. I mean Peter (Josh) in a tux.. sigh. ;-)
