Personal favorite apps: ShopShop, which is a shopping list app that you can cross items off of. Super handy! For Twitter I love Echofon, although I have the paid version (I'm pretty sure the free one is just fine, too). The Facebook app is pretty good too. And Skype, if you use that - no more headsets required, 'cause you can just talk as if you would on the phone. It's awesome. :D
I often download free versions of games and then if I like them and find myself playing them a lot, get the paid version. For mindless fun, try Paper Toss (where you flick balls of paper at a trash can).
Shazam is freaking awesome - it recognizes songs off the radio, so if you're like, damn, I wonder what this song is, you just use the app to track what it is. It's so cool.

Ooh, that shopping list one sounds very useful. I already have the (free) Echofon and Facebook apps. I don't use Skype, but that's useful to know about for future reference. I've heard of Shazam too - I might get that!

I don't have an iphone myself, but a friend of mine has this kinda guitar hero like game where you tap on the screen that's really fun and afaik it works with any music you have on the phone.
