Well, I have always felt that the Fire Nation was very reminiscent of Japan and Japan's ruling house (they've only had one throughout their entire history) is named "Yamato", which is the ancient name of Japan. That's not to say that's their "last name" because I don't think anyone refers to them that way - the current emperor is known as Emperor Akihito; it's like they are above family names because everyone knows who Akihito is. So I would say that if Zuko's famliy had a family name/dynasty name at all, it would be some old form of "Fire Nation". If I were writing a fanfiction and needed one (which coincidentally I do, so thanks for the inspiration!), I would probably use Kakuni as their family name - ka, Japanese for fire, and kuni, japanese for nation or country. Hope that helped!

The Japanese imperial family has had its power wax and wane over the centuries; sometimes they were in charge, sometimes the shogun was, and sometimes no one was at the helm. It's incorrect to say that they've always been ceremonial, and in fact during some periods they acted just like the Chinese emperors in the governance of their country, though the last time they were undisputed leaders would probably be during the Heian period (after that was when the samurai took over and the country turned feudal ( ... )

Toph is literally the only person I can think of in the whole series that has a last name. Zhao is just Zhao (I am too not with it to spell his title). Zuko says his name is Zuko, son of Ursa and Fire Lord Ozai.

I've seen a lot of people just use Agni. Or a varient of Sozin. Actually if I were to come up with one myself I would imagine that whatever it was Sozin changed it (sort of like how the British royal family were the House of Saxe-Colthberg Gothe (I almost think that's right without looking it up) to Windsor during the 20th century) to something like concoquerer. At least I would do that if I were him because that would be what I would want my legacy to be.

I need sleep so I apologize for misspellings and will admit that Japanese isn't my strong suite in languages. I have much more practice with Anglo-Saxon and Sindarian.

Apparently they have family names in the Earth Kingdom since Zuko's passport for his alias said Hong Lee. I like to think that the other nations don't use them.

I've seen some fics use "Son of Ozai" for Zuko, which sounds royal family-ish enough for me. I doubt they have or need a last name.

I'm inclined to say he doesn't have an official one. I think I read on one of the Avatar trivia facts that Toph is only one of two? characters to have been given a last name. (I can't remember the exact character count but I know it was less than five.)
