Blue Springs Restaurant Recommendation Request

Does anyone know of a restaurant in Blue Springs near the Copper Oaks Shopping Mall (near I-70 between 7 Hwy and Wood's Chapel Rd) which has vegetarian items on the menu (besides pasta and salads)?  My sister is treating me to the spa and lunch for my birthday; they are pure carnivore and carbohydrate fanatics, are at a loss for ideas, and I don't

There's a great Indian restaurant off of I-70 and Little Blue Parkway (the next exit west of Woods Chapel Road). It's called Taj Mahal and it's by the Independence AMC movie theater.

There's B.D.'s Mongolian BBQ, which may be mainstream, but I've always found the food to be good, and they definitely have vegetarian options (like tofu), plus meat for those freaky carnivores. ;) It's right off, I-70 before 7 Hwy, I think.

This would have something for each of us! Serious carnivores, eat little else except for noodles.

A friend of mine is a veg-head and lives pretty close to that area. Here are the places she frequents (she eats dairy and eggs, if that matters):

the thai place used to be right off 7 and i-70. you might see if they are still there.

ok, i live in blue springs, and i have no idea where this copper oaks mall is. :-S i will tell you, though...i'm a vegetarian, so i know of a few spots you might want to try
