Blue Springs Restaurant Recommendation Request
Does anyone know of a restaurant in Blue Springs near the Copper Oaks Shopping Mall (near I-70 between 7 Hwy and Wood's Chapel Rd) which has vegetarian items on the menu (besides pasta and salads)? My sister is treating me to the spa and lunch for my birthday; they are pure carnivore and carbohydrate fanatics, are at a loss for ideas, and I don't

there's a great indian place on Jackson drive, called Bollywood Cafe...it's out of this world, and there are tons of vegetarian options!
BD's Mongolian Bar-B-Q is pretty good, too...if you tell the grill guys that you're a vegetarian, they'll be sure to clean the grill and use separate utensils when preparing your food.
El Maguey has a great mushroom quesedilla.
54th Street Bar and Grill has really only one option on their menu...a salad/baked potato platter. or, i think they used to also have a steamed veggie platter, but i'm not positive.
O'Charley's on Jackson Drive has a veggie platter on their menu that's pretty decent, too.
oh...and if you like chinese, i really like Master Wok (on 40 highway, near 291). They have awesome mu shu veggies!
or, if you are in the mood for something a little more casual, you might check out Red Robin (also on 40 hiway near 291). They have a boca burger patty that you can get with any of about 1,000 different burgers. i like the whiskey river burger...*drool*. also nice...all you can eat steak fries. :)
