I visited a dietician today per my doctor's recommendation. I'm very disappointed. I really expect people to be much smarter than they ever are. I feel like I'm better informed about the disease after reading about it for a few weeks. I have a friend here who can't tolerate gluten or soy, they're in everything processed it seems, so she eats lots of fresh fruits and fresh veggies and spends a lot of time taking care of herself through rest and exercise and she seems to be thriving.
Do you have a Trader Joes? They have lots of GF options and mark things well as such. I bought some peanut flour there the other day and I'm excited to give it a try. Bob's and Arrow Mill make good Gluten Free AP flour mixes that produce a tasty baked good. You may not be avoiding dairy, but a gluten free flour makes a good wacky cake (which is vegan) which might be a good alternative and is super cheap to make at home.

Oh yes, we have Trader Joe's, multiple locations. I even get the flier in the mail. Here, I think every grocery store has tons of GF labeled products, but we cook so much from scratch, that we don't use much of the processed food stuffs. I was floored when I discovered that the Red Apple just down the street has what looks like the entire line of Bob's Red Mill fours. I bought their gluten-free flour mix, but am planning to one day begin baking again using mixes of rice, tapoica, soy and other alternative flours, but I'm not quite up for that challenge just yet.
