For you. A cookie recipe. I've seen these described as a variety of shortbread, but I find them rather far from the shortbread prototype. They're butter cookies, anyway. This isn't the most vegan-friendly recipe in the universe, though a lot of recipes don't bother with the egg yolk, so let me know if you find a vegan butter substitute that works

Ooh. I'll have to try these. The butter is easily substituted and as for the egg yolk...hmmm. Is it for binding? You can get egg replacer but I've used that in the past and it's shite. For the last batch of cookies I made I used molasses to bind and it didn#t affect the taste very much at all. D'ya think molasses would work?

A lot of the recipes I've read actually just don't bother with it. I suppose you could put a little molasses in, but I doubt it's all that necessary.
