Blueberry Sapan

Sapan is the word for boiled cornmeal in the Lenape language (also known as Delaware). An anglicized version of the name is suppawn, ocasionally found in some old recipes. Sapan was a daily staple for the Lenni Lenape, and they combined it with any of a number of other ingredients, either savory or sweet.

Si, davvero. Just replace the bear grease with olive oil, the blueberries with grated Parmesan cheese, and the maple syrup with tomato sauce. E voilà, polenta.

But the traditional name for it in Pennsylvania is mush.

In Friuli, they add grated sheep cheese roll it out thin and deep fry it. They call that frico. Disgustingly calorific but wonderful! :o)

Local Friul teeshirts proclaim (in Forlan) 'Make Frico Not War' :o)
