Ah, sans the gems, this is candi sugar. ;-) Check.

Now to find a waffle recipe that uses it. Heh.

I just read this recipe that is from Blatter aus der Walliser Geschichte - "Gebts uber Fisch warm für gest" a transcription of a 1581 cookbook manuscript for the Stockalperarchiv.

On page 78 is a recipe for hohlhippen using
fine flour,
well water
sugar
rosewater
ginger
pepper powder
(instructions given that spice can be left out for the ill)
A thin batter is made and cooked on a waffle iron
the waffle is rolled into a roll over a wooden form

Kunstgeschichte des Backwerks lists a waffel recipe from Plat (1609) that is a waffle meant for an underlay for marzipan (if I'm reading this right)
flour
sweet cream
egg yolds
rosewater
sugare
cinnamon
baked on a waffle iron
Plat is Sir Hugh Plat, Delights for Ladies 1609

I saw a few recipes for candi zucker in some of the confect books. I'm wondering what more there is to know from them!
