All the challah recipes I've seen instruct you to brush the  dough with a beaten egg. What (if anything) do you substitute for the egg?

Hey- I'm looking for egalitarian ecovillages that are Jewish + vegan friendly, but having a hard time finding any! (An egalitarian ecovillage is like a modern day commune, or sorta like a kibbutz, where they let you stay+eat for hours of work done). Anyway, does anyone know anything that might help me? Thanks!
