1 - I, too, have fidgety hands. I don't specifically try to tie my fingers in knots, but if my hands aren't twiddling with something, I'm tapping my foot rapidly or chewing on my lip.
My lower lip currently has an Owie blistery thing that looks like a cold sore due to lip-chewing.
I used to bite my nails instead. Blegh.
There seems to be one exception where I don't need to be physically fidgeting with something. When my attention is absorbed in a good book.

2 - I wanna see!
My eyes change colors. I mean really change. My birth certificate says 'hazel', but nobody I know has actually seen them that color. They all swear either that they're blue or green. On occasion they've been very unquestionably brown. And once... they were 'tie-dyed' rings of different colors. That was fun.

3 - Me too. But that one makes perfect sense. You've gotta bring something to do while you're catching your breath at the top.
I once brought a book to a movie. And I pretty frequently bring them to loud, dark dance clubs.
