Ah! I need to experiment with the crock pot. I don't know why I don't trust that appliance. I've heard good things about it. I guess I worry that I, too, would end up with beans (or worse) all over the floor when I got home from work.
I made something fun tonight. I was reading one of my mom's lady magazines (you know, the kind with weight loss stories and awesome, highly caloric recipies juxtaposed) and they had a recipe for something called "Cannoli Surprise". How could I resist? Basically, you make a cannoli filling and put it between two of those round cakes used for strawberry shortcake. Then you pour a chocolate ganache on the top to form a chocolate casing over the whole monstrosity. It was good.
Dude, we should have some sort of recipe swap thing going on.
I don't know. "Cannolli Treasures" is more unique, I think; the "X Surprise" title is pretty cliche. :P
Lady magazines are funny. I signed up for a free issue of Good Housekeeping, and they've sent me, like, four or five! Wait, maybe I told you that already. There I go repeating myself.
The thing that I find funny about all this is that tomorrow I'll be making a bean soup and I already know that I'll have a problem because the biggest pot I have probably isn't big enough. I may split it in half tomorrow morning (I'm soaking the beans tonight) and make two separate batches, but that's annoying because it takes forever to cook. :/
Yeah, that was the other thing with these red beans: the recipe actually called for canned beans, but I used dry beans that I soaked overnight. Then they took longer in the pot to cook through than the recipe said, even on a higher setting. Bah.
Yes, mostly because the recipe calls for a 15 oz can of beans, and I used a 16 oz bag of beans--dry. Soaked, they were bigger and there was more of it. And I wouldn't have had to double the rice... this was the "poor planning" I referred to in the first post. I thought about making two batches, but I didn't want to. Maybe my folly will be you salvation!
Glad to see your beans didn't end up on the floor! Next time try it without the tomato paste. (since tomato paste is so concentrated, it just tastes way too strong)

Yeah, next time I'll try to do it as outlined in the recipe. This time, I used dry beans (soaked overnight and all day) instead of canned, and I omitted the bacon. And, of course, the puree

Gah! I just saw this. I don't have access at home, so I read at work. I just made red beans and sausage a couple of weeks ago. I ended up using Emeril's smoke sausage and it was great. I used a crock pot too. I'll email you the recipe tomorrow. It was really spicy and good.
