Delicious pressure cooked stew

I got this recipe from Cook's Illustrated and then I modified the hell out of it:) I thought I had some apricots. Alas, it turned out I had none. So I put in twice the amount of raisins except I used currants insteads. I also left out the almonds entirely, used half the cinnamon, and a pinch of cardamon. That does sound good. Why don't you have any mint? It's ridiculously easy to grow - in fact, it's downright difficult to get rid of! Comes back every spring with no assistance, and tolerates inconsistent watering. If you plant it in the ground, submerge a pot in the ground first, otherwise the roots spread like wildfire and the mint will attempt to take over the universe the garden. But seriously - buy a seedling next spring, and you'll have mint on hand forevermore. :)

*sigh* We do have dried mint, but I always forget about it and it's kind of twiggy.

Whenever we buy fresh mint, it doesn't have any flavor. Is there some mint we could buy that would have flavor?

Do you have a pressure cooker? I love my pressure cooker. I'm looking at a pot roast in the pressure cooker right now.

Buy fresh mint from where? The gardening store? Or the grocery store? I would imagine buying fresh herbs from the grocery means they have already been picked sufficiently long ago that they're starting to lose flavor. Grow it yourself, and you don't have that problem. Our homegrown mint has seemed fine.

We received a pressure cooker as a wedding gift, and have never used it. It scares me, lol. (My mom generally only used it for artichokes, so I've never tried - or seen it used for - regular meals, even though I know people do it all the time.)

Oh. What kind of pressure cooker did you get? Does it have a rocker top or is it one with a spring valve? I've never had mine blow up in the almost 10 years of using it. I have come back and thought it was going to explode, but it hasn't:) I do really try to keep an eye on it when the pressure is going up now though. And I don't cook split peas in it either.

I gotta say, slow cookers are what scare me. I know people use those all the time, but it makes me nervous to leave the house with appliances running (although I've been known to leave with the dryer on).
