It takes 4 days to walk from New York City to Rochester.

But google maps warns me that there aren't always sidewalks or other pedestrian paths.

Is that including breaks to stop and eat or assuming you just walk straight through?

I'm pretty sure without stopping. They also don't specify how fast you are walking. Is it a brisk pace, or a leisurely stroll?

I would assume that if you're not taking stops to eat or sleep you would want the leisurely stroll as opposed to the brisk pace. :-P
